Recipe: Gujarat ka Dhokla! Made with gram flour, dhokla is a yummy snack originated from Gujarat but gorged on by whole of India. Ingredient: - 500 gms bengal gram flour (besan) 1 1/2 cup sour yoghurt
- 1 teaspoon green chilli paste 1 teaspoon ginger paste
- 2 teaspoon sugar 1/2 teaspoon turmeric powder
- 1 teaspoon lime/lemon juice 2 teaspoon baking soda
- Salt to taste 2 tablespoon cooking oil
- 1 teaspoon black mustard seeds 1 tsp sesame seeds
- 6-8 curry leaves 2 green chillies slit lengthwise
- 1/2 cup warm water 1/2 cup chopped coriander leaves
Method:- Mix besan with yogurt and keep it for 2 hours.
- Make a batter with warm water, turmeric powder, salt, limejuice, sugar, ginger paste and garlic paste. Mix all the ingredients well. Separate the batter into three equal portions.
- Grease a rectangle pan to steam the dhokla in it. Divide the baking soda into three equal parts and add one portion to one part of the batter. Mix thoroughly. Pour this batter into the greased pan and place it into the steamer.
- Cook till done. Open the steamer and check by touching the dhokla. Its properly done if your fingers come out clean.
- Repeat the steps with remaining 2 portions of the batter. The idea is to add the baking soda just before steaming.
- Let the steamed dhokla’s to cool off and cut them into 2 inch squares.
- Now come the tempering (bagaar) part. Heat the oil in a pan, add mustard seeds, sesame seeds, curry leaves and green chillies in it. Fry till the seeds stop spluttering. Sprinkle it onto the prepared Dhokla’s for a more taste and aroma.
- Serve the Dhokla’s with Imli ki chutney or Coriander chutney.
